His journey spans the kitchens of Mãos, Portland, Viajante and Noma culminating in a culinary language shaped by rhythm, restraint, and reverence for ingredient.

This limited time residency at CHARKOAL is not just a tasting menu. It is a living story, performed in unison, where every guest plays a part. Guided by Chef Edoardo Pellicano, the 13 course journey begins with the first flame and unfolds across movements shaped by flavour, memory, and stillness.
Each dish is revealed in rhythm, never ahead of time, preserving the emotional arc of the evening. The cuisine defies category, rooted in Indonesia’s natural bounty, complemented by select ingredients from abroad, refined through global technique, and elevated by fire. Menus are not shared in advance. Only the unfolding of story, feeling, and intent, course by course. Each gesture is intentional. The rhythm, quietly choreographed. Like a flight, once we begin, we move together.
To honour the arc of this shared journey, the experience begins promptly at 7:00 PM. We kindly ask all guests to arrive on time, as late arrivals may disrupt the rhythm for others. The residency runs for a brief season. Seats are limited. This is not just a meal. It is a shared performance.

For Chef Edoardo Pellicano’s residency at Charkoal, ceramicist Neha crafted bespoke plate-ware using wild terracotta, lava rock, and black sand. Fired at 1250°C, each piece reflects Indonesia’s volcanic origins, grounding every dish in texture, fire,
and a deep sense of place.

Rooted in ancestral wisdom, Ivant co-creates each piece with purpose, heritage, and mastery. From the land’s hidden beauty emerge wooden objects embodying depth, authenticity, and timeless craft, reflecting a shared passion that makes them one of our most valued principal collaborators.
Alongside Edoardo, Benjamin read the language of vineyards, Max spoke in the poetry of scents, and Jordan composed in the harmony of flavour. Together, they created a decadent, provocative pairing, each sip and bite layered with nuance and crowned with perfect harmony — designed to resonate long after the final course.
